

From Warehouse to Wellness
For years, I worked long hours at Amazon. The pace was intense, the stress was constant, and my mental health began to suffer. Deep down, I knew I wanted something different-I wanted to be a homesteader, to work with my hands, and to reclaim the lifestyle I truly valued.
But before the warehouse, I was a student of precision. As a graduate of Le Cordon Bleu Las Vegas, I was trained in the technical art of French cuisine. I learned that true health starts with the quality of the ingredient and the care of the cut. Even while working front-of-house, I carried that culinary discipline with me-a respect for the plant and a palate for what real food should taste like.
In late 2023, I reached my limit and took the leap. What started as “Middletown Microgreens” has evolved into Chef’s Botanica. I realized that microgreens were just the first step in a much larger mission. I wanted to use my culinary background to bridge the gap between “healthy eating” and “healing living.”
Today, I don’t just grow greens; I cultivate wellness. By combining my French culinary roots with the science of healing herbs, I provide hand-cut microgreens, rare botanicals, and small-batch tinctures.
